I love LEMONS! Not only is the citrus fruit a mood booster, but so is this cake!! A sweet, light cake that is moist and best of all available in so many options (two loaves, a bundt with a sweet glaze, or a layer cake with lemon poppy seed cream cheese frosting)! You can have spring and summer all year long with this amazing cake! 

PS: Parents...a secret you may not want to let your kids in on.  Lean in closely, this cake is high in fiber! Shhhh...I don't tell my minis and you don't have to either!
